zucchini and mint fritters

zuchini frittersIngredients

  • 10 baby zucchinis, grated
  • 2 green onions, chopped
  • 1 cup frozen peas
  • bunch of chopped fresh mint leaves
  • ½ cup chickpea flour
  • pinch of dry ginger powder
  • salt to taste
  • 1 green chili, finely chopped
  • vegetable oil, for shallow frying
  • pinch of baking soda
  • 1 tub full fat yoghurt
  • 1 small cucumber

easy peasey recipe

  • squeeze excess moisture from zucchini.
  • mix all the ingredients together (except yoghurt and cucumber)
  • add enough oil to a deep frying pan to shallow fry  the fritters.
  •  heat over medium heat.
  • make small balls out of the mixture and drop them into the oil.
  • cook for 2 to 3 minutes until golden and cooked through.
  • transfer to a plate lined with paper towel.
  • mix grated cucumber, salt and yoghurt together for a delicious soothing sauce with the fritters
