  • medium onion diced
  • ½ cup grated baby marrow
  • bunch of fresh coriander
  • 1 ½  cups chickpea flour
  • 1 cup cold water
  • ¼ tsp salt
  • ¼ tsp garam masala
  • ¼ tsp turmeric powder
  • 3 tsp   olive oil

  • take a deep bowl, start mixing chickpea flour with water , stirring it continuously to avoid lumps. you should get a thing but not extremely runny batter.
  • add rest of the ingredients and mix well to the batter
  • heat oil in a skillet/fry pan
  • pour small amount of batter and run it over the pan to ensure even spread
  • turn over and cook for a few minutes  once when the bottom is brown

tip: poke some holes with a form in the semi-cooked pancake to allow steam through and ensure that the pancake is cooked in the middle

serve with chutney or yoghurt mixed with grated cucumber , salt and garam masala
