mediterranean vegetable wraps

med wrapsmissing the med but too busy to go? well maybe this recipe will transport you there 🙂

ingredients

  • olive oil for flash frying
  • 1 red onion, sliced
  • mixed peppers chopped (red, green, yellow)
  • baby marrow (zucchini chopped)
  • tomatoes (chopped and deseeded)
  • crushed garlic (to taste)
  • fresh coriander
  • salt to taste
  • feta cheese-crumbled ½ cup
  • greek yoghurt 1/ 2 cup
  • mint leaves or 1 teaspoon dried mint leaves
  • store bought whole wheat wrap

easy peasey recipe

  • heat oil in a frying. add garlic, red onions, rest of the vegetables and flash fry (we don’t want them to become soggy)
  • cook for 5 minutes, take off heat and let it cool down.
  • fill into the wraps, crumble the feta just before closing the wrap and serve with mint greek yoghurt
